Hi Smithy, though not being a fan of belt drives, I nevertheless admire the hell out of what you did with your bike!The more I have belt bikes, the more I like them compared to chains. Chains are a hassle, need to be lubed every few hundred miles, usually need to be replaced with the sprockets at around 10,000 miles (16,000 KM). Often need adjusting. With belts, do almost nothing other than a quick check twice a year of so. Replace at perhaps 50K miles (80 KM) on most bikes.
Seeing that you have reached 60k (congrats!) and what you want to do, I would not recommend to service the fork if it is not necessary.
I had it serviced at 100 kkm for about 500 Euro but did not notice any change in performance. So, if it is not leaking or malperforming, leave it be.
IMO the coolant doesn't have to be changed as often as demanded by Energica's manual. It's normal stuff (glykol + water) you find everywhere which is hardly deteriorating even when exposed to higher temperatures, which it isn't really in our bikes.
Being at 122 kkm at the moment, I luckily have to see any bearings making trouble yet. But I am a dry weather rider and that probably helps, because water combined with dust is what wears bearings down.
However, my Can Am Origin is interesting. It has an enclosed drive chain and self adjusts, just change the gear oil once in a great while, It is protected from the dirt by being enclosed. But it will take time to see how well it really works out.
