at first also I thought that it was strange behavior..
it's just normal on such models (i have 2021 S which is basically same bike) and it's called "magic battery".
it was slightly improved on latest updates but it still happens.

in my case it happens when i start a ride in warm condition then ends in much colder environment. SoC drops hard.
Then when I get home and attach to outlet, SoC instantly raises by about 10% in 10 minutes which is no sense (i have no charge tank).

this let me think that battery returns to "normal" temperature then display actual SoC.

from a engineer point of view I suppose that this is due to temperature which lowers voltage to cells. Even if BMS is aware of battery temp, engine temp and electronics temp, continue calculating SoC based on Voltage only and not considering temperature drifting so from their point of view available capacity is much lower than before.

This also explains why you still see a good consumption (50 Wh/km): you're consuming same but your battery instantly got smaller.

It’s a bit difficult to access this bulb so change it out to an LED so you never (hopefully) have to do it again. 

My aim is to LEDificate whole bike.. I already swapped headlight bulbs with LEDs one.. so the only ugly orangish light is the license plate one.

seems quite difficult to access it but I'll definitely try.

before dismounting parts I'll involve dealer as bike is about 1month old so I suppose either belt and brake were properly set before delivery..
I'm not really concerned about brake noise as it's not happening when it's hot and, of course, it's a brake.. at worst I'll have to replace pads.
I'm more concerned about harmonics when accelerating.. hoping to not bring damage to engine.

Having recently acquired an IXXAT programming cable & DVT license for use on a 2021 SR, these are the exact settings in the Sevcon controller:
  Sport - 2.6% and 3.4% of motor torque in neutral and brake regen, respectively. Allowable motor torque is 100%. Max speed is 6484 motor RPM (about 106 mph)
  Eco - 5% and 8.5% motor torque in neutral and brake regen, respectively. Allowable motor torque is 52% of max. Max speed is 4284 motor RPM (about 70 mph).
  Custom - setting 0 regen does just that. Setting max regen in the app gives 5% and 8.5% just like ECO mode. I'm going off memory because I don't care to plug back in, but I think setting the max torque to 0 in the app sets the actual motor torque to about 36% of max. I could be wrong on that one because it isn't a parameter at which I was ever particularly looking. Unless someone really needed to know, I don't plan to jack back in to find out.

In terms of raw power output, sport and custom set to 100% are the same.

as per my feelings, custom to 100% isn't better than SPORT so it matches your provided information.
then i can set CUSTOM to be more conservative than ECO, that's what I wanted to obtain: 3 different power steps

I can verify that my 2018 Zero S tops out at exactly 70mph (about 112kph). In ECO mode, it has only slightly more closed-throttle and braking regen than it does in SPORT mode, but SPORT runs the top speed into the 90mph range. Moving the Custom mode to 100% in all performance parameters provides the most of everything on my bike. Top speed goes up to an indicated 98mph.

so basically CUSTOM set at 100% torque and top speed is more powerful than SPORT?
