I apologize if this has been asked before, but I couldn't find it. I want to buy a fast charger for my bike, but need to know the battery chemistry and cell configuration, and I can't find that info on Zero's webpage and I haven't had much luck searching forums. Does anyone happen to know?

The link says 102V, 2.8kwh? I'm guessing this is the FX3.6 perhaps? According to my app, max voltage is 116V, should be way more than 2.8kwh. Has there been no change to the batteries in 11 years?

That link you clicked on was from 2013 and is talking about the nominal voltage, not the max. That is indeed 116V (116.2V to be exact) and the actual capacity for your bike is something like 6.3kW/h.
