New 2022 Zero FX owner with a Delta charger coming. Plan to mount the charger in a rear bag or top box and build an extension cable. I have the Anderson SBS75X Brown connectors coming, but would obviously like to keep the cable size as small and compact as possible. It looks like the charger is only 8.5 amps and according to charts, I can get away with 12Awg copper wire for a 6 ft run? Am I missing something? Any advice on this? I plan to also build some sort of waterproof plug for the connector on the bike to keep water out when the extension isn’t plugged in.

I think with 12 Awg you should be fine (see link below), you can try it and check if the cables heat up.
Make absolutely sure you do not switch the positive and negative.
