I recently picked up a used 2021 Eva. I find the seat really jams my nuts. Installed the handlebar risers and that helped a little. I guess I’m just used to more normal non-sport bike seats. Does anybody know of a replacement seat that’s a little more traditional looking? It looks like the esse esse 9 seat is OK but not sure if it’s a straightforward replacement.

Sorry man, but for the moment you've either got to create your own custom seat or find a pad that helps.

Corbin Saddles has a ride-in program, you make an appointment, ride in, they ask you what you want, rough it up, get feedback, adjust, and you end up with a custom seat the same day.

If you are handy you might want to consider modifying the seat yourself.
The EVA seat has a slight hump at the front, this is likely the culprit of your discomfort.
The seat consists of 3 parts: The pan, foam and a cover.
The cover is attached to the pan with staples that are located under a felt strip. To remove these slip a small flat bladed screwdriver under then and twist to raise the staples away from the pan. Then use needle nose pliers to pull the staples out.
You can use various tools (serrated knife, rasp and 120 grit sandpaper) to reshape this section of the foam to your liking.
Once finished the seat cover can be reattached using a electric stapler.
