emailed Zero support and we concluded that it is likely the throttle assembly. They posted that very swiftly all the way out here to Oz. Great and fast service. W/end will change the throttle over and see if that fixes it.

Upodate:
new throttle assembly installed.
4 rides no problem,
5th ride at my "reference spot" while accellarating from 60k upwards swiftly had the motor cut out again. No noise, just loss of power. Only way to get it turning again was turn key off and on. So we are not quite there yet.
there is a test to check for eletrocmagnetic interference - will do that next and update here.

Could the motor be shutting down due to overheating?

Does your bike have the cooling fan attachment that sucks (or is it blows) air from the back of the bike, behind the seat, through a flexible tube connected to the motor, to help to cool it. And if it does, is it working?
