My 2016 SR has white spots on the tank plastics, looks like someone spilled brake fluid on it, and it just keeps resurfacing. Looks like birdshit, and keeps bleeding back out. Oh well.

I read something about plastic welding on the tank- is there anything overly complicated with replacing the tank plastics? Can i just swap it out with basic tools?

Yes. They are very easy to swap. I have swapped all the body work on my 2017 SR in order to change the color from red to black.

The unofficial zero manual should have step by step but basically just remove the seat and then you will have access to all the Allen head and Phillips head screws you need to remove in order to swap tank.

My bike had the same brake fluid spot on the tank from factory when it's new. Just use car wax and some hard working, you can polish those spot out.

I don't know how bad is your tank, but it is worth try.

I'm hesitant to try reconditioning, when i bought the bike the marks werent there, but they started surfacing out of the plastic slowly, until they were bright white and visible- so i think the fluid soaked nice and deep into the plastic. the plastics themselves are cheap, i just wanted to make sure that if i bought replacements, i could install them at home with no plastic welding or needlessly complicated bullcrap

Yeah, the most difficult part is the wood screws holding the plastics together.

I had the exact same thing. Also did think that break fluid or something got spilled on it because I spotted it the first time it came back from a repair job.

The wood screws in the front shoulder plastics that join to the tank are, indeed, the most annoying fasteners on the bike. (Aside from the bolts whose heads face the motor... sigh.)

I tend to use a tiny low-overhead ratcheting screwdriver to work on those. Be careful refastening them, as they can split the wells/collars they fasten into if tightened too much.

I ended up breaking out the power drill and its 90° nose that I use for working on the house.  That way I could control the speed and not have to wave my arms around while balancing everything.

I didn't want to start a new thread since my question is in line with this one.

When removing the tail plastics, I saw a youtube video where the guy snipped off the plastic gromets. Is that necessary ? Do they not pop out like standard automotive ones?

I didn't have to break anything to pop the tail off.  I don't know what you're referring to.  I did have some screws that didn't line up and I omitted.

It would seem that not all bikes have that piece, my 2019 DS doesn't. It could either be a model year variation (most of the ones I found with it are from 2017, although I found some that are supposedly from 2019) or it may only be on the R models since they have a different controller.

Could just be R models. I just checked mine and i have them. They feel like they'll just pop out. Not sure why this guy goes after them with the jaws of life

Hmm, I removed the colored part before the black part.  I didn't remove the tail pod at all...
