I want this so badly...But does this setup replace any other option for charging? I would love to be able to make this a cross country machine, but that would only be an occasional long-trip use. While this is installed, can I use the stock 110v for charges where I do not need to be done in an hour or so? or is the anderson connector (quiq charger) still open?

This setup removes the stock charger.  The recommended solution with a Diginow installed is to use a J1772 adapter, or buy an EVSE.

Would this work for a FXS? Using two instead of three and requiring some creativity with mounting, I'm assuming?

Each module outputs 32A, so two would be 64A. The FXS 7.2kWh battery is actually 57Ah so you'd need to program a custom board to only output max of 57A. 2 modules would be over 1C.

You can connect only one of those chargers to 110V AC, and the charger will automatically reduce the output amps to make it safe to be used on a regular household outlet.

You can use something like this: https://www.amazon.com/LECTRON-Level-Charger-Extension-J1772/dp/B079NTXNK7/ref=sr_1_7?crid=5R17659WC1U0&dchild=1&keywords=j1772+16+amp&qid=1626950638&sprefix=j1772+16%2Caps%2C155&sr=8-7  , connected to the J1772 inlet of the DigiNow that has only one charger connected to it, also, because the DigiNow isn't using the J1772 protocol, just the J1772 connector, there are other ways to do it.
