I don't understand any of your reasons! I think you're churning too hard on charger selections and had a better option already with DigiNow. (And I don't understand why you pursued liquid cooling which as you found out is overrated for your weather.)

To be clear, the Eltek Flatpacks are fine, but they are not built for vehicle use, and the enclosure as depicted doesn't seem like it addresses that deficiency. They'll be good stationary chargers, set up in your garage, but have a more than negligible chance of having an equipment failure from a combination of dust, moisture, and vibration.

It's been a while now, how is the "server" charger holding on a moving e-bike? It is for sure small, but the 3,3kW Diginow units are also small.
Is the main reason for this solution the price, is it cheaper to make?

<<i'm going for Diginow 2.5 3,3kW in belly pan, 6,6kW and 9,9kW also possible, but every development in diversity for expensive chargers is welcome these days>>

Still working like a charm. It is cheaper and a bit more compact(Diginow 2 had a lot of cables and connections, but I guess that's over with the bellypan.)
