No, your helmet won't fit into the saddle bags.
The bags on the side add extra drag, it's more stuff in the way of the air stream.  Behind the driver might be better because the air is already upset, you are not upsetting new or more air, if that makes sense.

Currently strapping a bag to the seat and I know it could mess up the seat sensor
Why not bypass the seat sensor? It doesn't do anything useful. I bypassed mine on my SS9-. In that bike, black wire to blue soldered together under the seat.

I've always run my bikes with the biggest top case I could find (usually my Givi V56 Maxia) and the efficiency has either stayed the same or even improved (by ~5 MPG on my Yamaha FZ6R). Side cases have always caused a large increase in drag, but they were just too damn useful so I never rode without them, especially when I had ones that could fit a helmet like on my FJR.

Thats the one thing I wish the givia would expand out enough to put a helmet in.

Sometimes the rear bags help with keeping the wind up and over stuff.

when I trailer my bike, the MPG towing the bike is not that bad, it's actually about w/o the trailer, I find the bike kind of splits the airflow and sends it to the sides like a wake on a boat.  WHen the bike is off the trailer, it's horrible, the back gate is like a huge sail now grabbing the wind rolling off the top of the truck.  The bag would kind of do the same thing, keep the airflow from churning and becoming turbulent until AFTER it's interacting with the bike.
